Eun Soon Choi

Eun Soon Choi, entered eternal life to be with her Lord and Savior on the 26^th of November 2023 at her home in Odessa, Texas surrounded by her family.

Mrs. Choi was born on the 11^th of February 1935, in Korea.  After surviving the Japanese Occupation in the 1930s and the North Korean communist regime in the 1950s, she met her husband, Hyo Soon Choi, in South Korea.  She and the family immigrated to the island of Guam from Korea in 1978 and then moved to Dallas, Texas in 1981.  While in Dallas, the Chois owned a donut shop for over 10 years.  After their retirement, Mrs. Choi and her husband moved to Odessa, Texas to live with their daughter’s family and help take care of their grandchildren.

Mrs. Choi was a faithful Christian who enjoyed reading her Bible and sharing her beautiful singing voice in the church choir.  She also enjoyed cooking various Korean dishes for her family and also loved to take trips around the United States visiting many states, including California, New Mexico, Arkansas, Alaska, and many others.

She is survived by her daughter Yoon Ham with her husband, Yung Ham, and their children Stephanie (with husband, Eric) and Aaron (with wife, Crystal and son Arthur) and her son Robert Choi with his wife, Kellie and their children Taylor (with husband, Zachary), Samantha, and Alex.
